Freezer preparation tips
- Use freezer bags whenever possible. Place them flat to save space, then mount them upright and once frozen, it’s easy to “meal” in the refrigerator.
- Mark everything. Write the recipe name, date and cooking instructions directly on the bag so you don’t have to dig later to try to remember what’s inside. (Click here to get the e-book with tags!)
- Freeze part. If you don’t need a whole family meal every time, divide it into two smaller bags when freezing. This way, you can only thaw what you need.
Remaining storage tips
- Refrigerator storage: Place leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the stove or microwave.
- Refrigerator storage: Most of these meals can also be frozen again after cooking. Allow leftovers to cool completely and store them in a freezer-safe container for up to 2 months.
- Resurrection leftovers: When adding chicken soup, beef soup, or even water, add chicken soup and add water to make the meat fresher and keep the meat tender.
- Partial control: I like to freeze leftovers for lunch later. They made a great snap-up option on their busy days.
- Toppings are your friends: Fresh toppings like cheese, herbs, green onions or sour cream bring the leftovers back to life and make them feel brand new.
