- Preparation Note: Assemble the tomato mixture into the tomato mixture before baking, and then brown the chicken.
- Recommended tools: Meat thermometer ensures a juicy chicken every time.
- Suggestions: Serve Garlic roasted Mashed potatoes, pesto sauce, and even some zucchini noodles. Add a simple green salad and some bread sticks to soak up all the marinade.

Ingredient tips for Bruschetta chicken
- chicken: Boneless, skinless chicken breasts are the best choice for this recipe, but you can also use chicken thighs or frozen chicken steaks in tight conditions. Simply adjust the baking time until the chicken reaches a safe internal temperature of 165°F.
- tomato: Fresh cherry or grape tomatoes have the greatest flavor and adds visual appeal, but Rome is a great choice because they have thinner skin and are more fleshy.
- Marinate: Made from storage bases such as Italian seasonings, garlic, balsamic vinegar and petroleum, this marinade is easier. If you are short of time, you can also use a bottle of store-bought Italian dressings.
- cheese: Fresh slices of cheese give the dish a rich and creamy flavor, but can be used with chopped cheese, feta or parmesan or with thinly sliced mozzarella.
Favorite variant!
Make it more Mediterranean and add sliced black or kalamata olives. Try some sliced mushrooms, chopped spinach or kale, or some chopped zucchini for extra nutrition and color.

Keep leftovers fresh
Store the remaining bruchita chicken in the refrigerator in a covered container for up to 4 days. Reheat on the stovetop or in a frying pan in the microwave.
Leftovers can be placed on a bed of vegetables, hidden in pita bags, or low-carb-wrapped dishes for weekday lunch.
