The taste of a chocolate malt is what I needed to bring back my childhood. My grandpa used to make chocolate malts for us when we visited and we would take them out of the upper floor very carefully and walk out of the second floor door and walk out on the roof and enjoy them. This batch of chocolate malt ice cream brought me back to my grandparents in Dewey, Arizona in summer. The food we eat has a lot of memories and I will love it when I can make something that will make me come back in time today.

Chocolate malt ice cream
Making ice cream is very easy. No eggs are needed, you don’t need egg usst for this ice cream. You just whisk together the cream, cocoa powder, malt milk, sugar and salt and bring it to the immer.
Stir the chocolate until melted, add the milk, and cool the ice cream base until well. Once the mixture is cool, pour it into an ice cream maker and stir it.
You can make this ice cream with milk chocolate, semi-sweet or dark chocolate. But, while I love dark chocolate, for the classic malt flavor, the lighter chocolate will bring a classic flavor.
You can enjoy the ice cream directly from the machine for soft ice cream, or transfer it to the refrigerator until it is firm enough to scalp it into a cone or bowl.

There is enough chocolate ice cream here to satisfy the biggest chocolate lovers. My husband has two favorites, they have been on the top of his ice cream list for over a decade. First of all, this spicy chocolate ice cream. It’s cold cream chocolate with spicy heat with chili and cinnamon. It warms your mouth even when you cool from the ice cream.

In a large pot, mix together the cream, cocoa, malt powder, sugar and salt. Stir to combine and heat over medium heat, stirring constantly until it is combined and starts to steam and simmer. (If you want, you can increase the heat, but keep stirring continuously. Don’t walk away at this time.)

Remove from heat and add chocolate immediately. Stir until the chocolate is completely melted. Stir the milk and vanilla. Cool for at least 4 hours or overnight until completely cold.

Pour the mixture into the ice cream manufacturer and process according to the instructions of the machine. Serve soft ice cream immediately, or transfer to a freezer-safe storage container and freeze until ready to serve.
