In a large pot, mix together the cream, cocoa, sugar and salt. Stir to combine and heat over medium heat, stirring constantly until it is combined and starts to steam and simmer. You may increase the heat if you want, but keep stirring non-stop. Don’t walk away now.

Remove from heat and add chocolate immediately. Stir until the chocolate is completely melted. Stir the milk and vanilla. Cool for at least 4 hours or overnight until completely cold.

Pour the refrigerated base into the ice cream manufacturer and process according to the instructions of the machine. When the ice cream is stirred, cut each cookie into 4 pieces.

Sprinkle 1 cup of cookie parts on the bottom of the refrigerator safety container. While the ice cream is stirred, remove half of the ice cream on the cookies in the container, sprinkle the ice cream and top with 1 cup of cookie slices. Spread the ice cream on the container and sprinkle the remaining cookie chunks on top.

Serve soft ice cream immediately, or transfer to a freezer-safe storage container and freeze until ready to serve.
