Cosmic Brownie Cookies – Mel’s Kitchen Café

These cosmic brownie cookies are both cute and delicious! A rich super chocolate chip cookie topped with ganache and sprinkled with rainbow chips.

The drama of these cookies on the grocery store’s iconic box Universe Brownies is more delicious (very easy to make!).

These cosmic brownie cookies have a strong chocolate flavor and a delicious and rich texture.

This is done in two ways:

  1. Soft and chewy super chocolate chip cookie dough is rich in brown sugar to granulated sugar ratios, involving a lot of cocoa powder to really dial in chocolate flavor
  2. The cookies are slightly stressed from the oven (more below).

Why press the cookies after baking?

These cookies may come out slightly from the oven. That’s a good thing because we don’t want the cookies to spread and turn into thin wafers. There will be no place to be happy.

Pressing the cookies right away from the oven ensures an extra middle and creates a surface that is easier to frost and sprinkle.

We’re not here to press the cookies down Smithereens – just lightly flatten the top of the dome onto a platform to create a thick chocolate benefit by bringing the cookies into thick chocolate.

Cosmic Brownie Frosting

The top of these decades was a simple chocolate ganache. Ganache is just a quirky word for chocolate, combined with hot cream and stir until thick and shiny.

Chocolate Ganachi is very, very rich. And very, very good.

(Spoiler Alert: It’s delicious on about a million things too, so don’t worry if you have leftover Ganache from this recipe – spread it on Graham Crackers or bananas or eat with a spoon.)

Once the cookies have cooled, spread a ball of chocolate ganache evenly on top, and before the ganache set, sprinkle with rainbow candy-coated fries.

Where to get rainbow candy coated chips

Rainbow Candy Coated Chips are classic colorful decor on Cosmic Brownies, and they are also very fun and are perfect for these cookies.

Cosmic Brownie Cookies

  • 1 cup ((227 g) Butter, soften to room temperature (not too soft!)
  • cup ((318 g) Pack
  • ½ cup ((106 g) granulated sugar
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 2 Big ((100 g) egg
  • 1 Spoon Vanilla extract
  • cup ((390 g) All-purpose flour
  • cup ((57 g) Dutch or natural, unsweetened cocoa powder

top:

  • ½ cup Heavy cream
  • cup ((255 g) Semi-sweet chocolate chips
  • Rainbow Candy Coated Mini Chocolate Chips (see Notes)

Prevent the screen from becoming dark

  • Preheat the oven to 350 degrees F (see note!). Line a pan with parchment; set aside.

  • For cookies, In a bowl with an electric hand-held mixer, or in a stand mixer with a paddle attachment, cream the butter, brown sugar, granulated sugar, baking powder, salt and baking soda cream until the mixture is light and fluffy, 1 to 2 minutes.

  • Add eggs and vanilla. Mix until well combined, scraping off the sides of the bowl as needed.

  • Add flour and cocoa powder. Mix until evenly mixed and there are no dry stripes.

  • Spark the cookie dough into 2 tablespoon size balls and roll until smooth (see notes for larger cookies). Separate a few inches apart on the prepared baking sheet.

  • Bake for 10 to 11 minutes until the cookies are gently puffed and placed on the edges, but still soft in the middle.

  • Elective: In my oven, the cookies have a slightly dome on the top after baking. Immediately came out of the oven and I pressed the thickness lightly with flat glass. Don’t smash them flat! Simply press the top of the dome so that the cookies are still thick and even cross over the top. This makes the frosting easier (prettier) and also provides an extra forgery center for the cookies.

  • Let the cookies cool on the baking pan for a few minutes, then move them to a cooling rack to cool completely.

  • For Ganache, Place the chocolate chips in a medium bowl.

  • Heat the heavy cream until steamed and bubbles form around the edges. Pour the butter onto the chocolate chips and press the chocolate chips into the butter. Let stand for 2 to 3 minutes until the chocolate chips melt, then stir or stir until the mixture is smooth and smooth.

  • Let the Ganache cool for 5 to 10 minutes to thicken slightly.

  • Cooled cookies with a ball of ganache frost and sprinkle with rainbow candy crumbs.

  • Serve immediately when soft or let the cookies sit at room temperature for about an hour until Ganache is set. Cookies at room temperature and horrible Delicious food refrigerated.

Rainbow chip: These are the rainbow chips I used for the *cosmic Brownie* atmosphere (if there is no link to the atmosphere, just search online for “Rainbow Baking Chips”). Mini M&M, flat colored sprinklers, Crips chocolate pearls or other colorful sprinklers can be used as a replacement for rainbow chips.
Baking temperature: If your oven is cool (or cookies tend to flatten), raise the baking temperature to 375 degrees F and bake for about a minute (keep a close eye on the cookies to avoid baking).
Cookie size: I used a #40 medium cookie spoon to disperse about 2 tablespoons of dough per cookie. These cookies can be larger by #20 Cookie Scoop. Bake the cookies for 1 to 2 minutes longer.
