Smoked Salmon Pasta and Pine Nuts

This pasta is like in a bowl in spring or summer. It’s lightweight lemon flavor and has a great flavor. The lemon cut through the cream, the salmon brings a slightly smoky depth, while the pine cones add the correct crunch.

Bring a pot of water (at least 4 quarts) to a boil and add salt with about 1 tablespoon of salt. Cook the pasta according to the direction of the packaging, then drain, and reserve ½ cup of pasta water.
-
When the water heats up, the pine nuts turn brown. Place them in a large skillet over medium heat. Stir occasionally and let them cook until aromatic brown. Remove the pine nuts from the pan and set aside.
-
In the skillet you use for pine cones, heat the oil over medium heat. Add the garlic and onion and cook until the onion is tender and the pan is fragrant. Add the wine and stir. Let the wine be reduced slightly, then add the cream, lemon juice and 1 tablespoon of lemon zest. Let this cook for 1-2 minutes until slightly lowered. (If the pasta is not cooked yet, remove the skillet from the heat until ready.)
-
Add the cooked pasta to the skillet and torture it well. If it’s too dry, add one or two reserved pasta water. Add the smoked salmon, pine nuts, parsley and another 1 tablespoon of lemon zest. Twist again and remove from the fire. Season with pepper and pair with lemon wedges on the sides.
