On these vanilla wafer cookies, I will never be ecstatic again: crunch, taste, everything. They are totally great. When I was making recipes for banana pudding ice cream, I became obsessed with homemade vanilla ice cream. These cookies proved to be totally irresistible to everyone who tasted them, and we all turned back all day long and “again.”
I found it interesting that I adjusted the Swan’s down recipe using cake flour. Preheat the oven to 350°F. The second line of paper tray comes with parchment and set aside.

Mix the butter and sugar in a mixing bowl and stir with an electric mixer until about 2 minutes, scraping the sides of the bowl. Add eggs, vanilla and milk. Try again until merged.
-
In a separate bowl, stir together flour, baking powder and salt. Set aside. Add the flour mixture and mix at low places until combined.
-
Place a very small dough spoon (about 1 teaspoon in size, spread cookies) on a parchment lined pan, about 2 inches apart. Bake for 8-9 minutes, depending on size. Watch out for Donnis.

If you want to make larger cookies, 1 tablespoon spoon will result in about 3-4 inches of cookies and will take 10-12 minutes of baking.
